Jamie’s Food Revolution is all about encouraging home cooking and to unveil the dark side of the food industry. This month is about EGGS! All food ambassadors around the globe are sharing their favourite Egg Recipes! Here is mine!

A Super Breakfast Bowl

Be it fried, baked, boiled or scrambled, I LOVE eggs. Last year, we started raising hens on your roof top garden. It has been a treat ever since. Picking up fresh free range eggs from your garden is such a big blessing.  Recently, the hens stopped laying eggs and now we are buying free range eggs from a Organic City’s Eco Store.  These are lovely desi brown-skinned eggs with an orange yolk. 

Eggs are super rich in vitamin A which is good for your brain, eyes & skin; B 12 which is essential for your immune system, nerves and muscles and contains good amount of Vitamin D, folate & Iron. Pair it with gluten-free, protein rich organic Quinoa, kale and spinach and there you have a super breakfast bowl!

  1. Free range/ organic boiled Egg
  2. 1/2 cup (organic) Quinoa
  3. 1 cup chopped (organic) mixed greens: Kale, Spinach and Mustard
  4. 1 teaspoon extra virgin olive oil
  5. some roughly shopped parsley ( you can use dried parsley)
  6. seasoning
  1. Bring 1.5 cup water to boil.
  2. Add Quinoa. Let it simmer with the lid on for 10-15 minutes or until it becomes fluffy and most of the water has evaporated.
  3. Add greens and mix gently.
  4. Drizzle oil & add seasoning.
  5. Let it cook for 1-2 minutes on low heat.
  6. Serve it with a boiled egg cut in half. Season the egg and sprinkle dry or fresh parsley before serving.
